Homemade Fresh Pumpkin Pie

Homemade Fresh Pumpkin Pie
Pastry for Single-crust pie:
1 1/3 cups all purpose flour,
½ teaspoon salt
½ cup shortening
3 1/3 Tablespoon of cold water

2 cups mashed pumpkins
1-12 ounce can of evaporated milk
2 eggs beaten
¾ cups of brown sugar
½ tsp ground cinnamon
½ tsp. ground ginger
½ tsp ground nutmeg
½ tsp. salt
Preheat oven to 400 degrees bake pie for 15 minutes and reduce oven to 350 for 45 minutes.
Cool pie before cutting and serving top with whip cream.

Slow Cooker Pumpkin Soup

Mix together:
4 cups of freshly baked pumpkin mashed
1 medium onion chopped
1 large leek
1 small Celery root
2 granny smith apples chopped
7 cups of vegetable broth

Turn high to cook all vegetables.
Add herbs: of 1 tsp of fresh ginger, 1 tsp of fresh sage, 1 tsp of dried thyme ¼ tsp turmeric, dash of nutmeg, sea salt to taste and freshly ground pepper
Add ½ cup nonfat yogurt and 1 cup apple cider.
Turn low to cook slowly before serving.
1 cup of grated cheddar cheese added before serving is optional. Sweet Italian sausage may also be added for additional protein.

Pastor Deborah’s Pumpkin Bread

Mix together dry ingredients:
3 1/3 cups flour
2 tsp. baking soda
1 ½ tsp salt
1 tsp. cinnamon
1 tsp nutmeg
2 cups of sugar

Mix liquids in a separate bowl:
1 cup oil
4 eggs
2 cups of fresh pumpkin

Thoroughly Mix wet and dry together
Makes 3-1lb loaves or many muffins
Bake at 350 degrees for 1 hour for loaves

May add chocolate chips or chopped pecans
Crumb topping is an optional for muffins: ½ cup brown sugar, 4 T melted butter

Pumpkin and Peanut Butter Dog Treats

1 cup oatmeal ground to a fine powder
Add 1/3 cup of fresh pumpkin mashed and ¼ cup of peanut butter
Roll out dough for cutting into bone shapes or squares. Add more dry flour if needed
Lay on parchment covered cookie pan for baking 30 minutes at 300 degrees.
Store in dry container
